Pumpkin Cookies

This is a recipe that is really all my own. My best friend's grandma, Gretta Cook, used to make pumpkin cookies like this. She died several years ago and apparently took the recipe with her. I got a recipe for Gretta's pumpkin cookies from Rici and tried it out, but they weren't the cookies that I remember (though they were really good). I wasn't able to find a recipe that matched up, so I spent quite a lot of time making my own. Everyone always raves about these cookies, so I have decided to share them with you all :) They're perfect for celebrating my favorite time of year!

Ashlee's Chocolate Chip Pumpkin Cookies

In a large bowl combine:

2 cups canned pumpkin
2 eggs
1 cup oil (butter does not yield the same results)
2 cups sugar
2 tsp vanilla

In a separate bowl combine:

4 cups flour
4 tsp baking powder
2 tsp baking soda
2 tsp cinnamon
1 tsp salt

Mix dry ingredients into pumpkin mixture.
Add 2 cups chocolate chips.
Drop by tablespoons onto ungreased cookie sheets.
Bake at 375 degrees for 10-15 minutes.

Enjoy!

I will have to try them with wheat- it seems oil is the best for pumpkin cookies

alright, today I make these, with cooked pumpkin that I got for free (the pumpkin that is, I cooked it) and wheat flour. I may have a tiny taste-

You are going to make me a hero, Ashlee! I am going to make a batch of these to surprise Michael. He loves your cookies above all others.
